Hi there! With this great summer weather (finally) comes refreshing fresh summer salads in my home. I thought this recipe would be a good add-on to last week's post for black bean burgers. This salad is great as a side dish or can be eaten as a meal by itself because the beans pack the dish with protein. I just kind of made it up so there aren't really any exact measurements, just add the seasonings and lemon juice to your liking. I think this would pair well with homemade guacamole too, mmm.
Colorful Summer Salad:
Can of black bean, rinsed and drained
Can of corn, rinsed and drained
2 plum tomatoes cored (to take out excess liquid) and diced
1/4 of a red onion, diced
1 bunch of scallions, chopped
1 handful of cilantro, stems removed and leaves chopped up
1 large avocado, diced
1 can of hearts of palm (about 6 large stems for me), sliced
salt, pepper, olive oil, and lemon juice to taste
Mix all ingredients through and serve! Stays in the fridge for a couple of days but definitely best when eaten the same day.

ReplyDeleteAlan's mom makes something similar to this salad with the exception of the hearts of palm and avocado. It is such a great salad.
